This green tea is none other than Longjing. Longjing tea leaves are unfermented.&lt;br /&gt;I have visited its farm and was first introduced to this great tea. I found it very gentle and sweet and these teas are expensive, its prices&amp;nbsp;depend on grades. It is best consumed in six months times. However, its live span can prolong if you store it in the refrigerator. &lt;br /&gt;&lt;br /&gt;At that time, I bought several tins of two main grades, AA and AAA. The AA is packed in green hard paper canister whereas AAA is packed in gold colour hard paper canister. I found it quite easy to brew.&amp;nbsp;Place a few spoons full of tea leaves into a white transparent glass cup, preferably so that you can see clearly its rich flavour. Then pour boiled water with about 80 degrees celsius into the glass with the tea leaves. Steep tea leaves for about 5 minutes before you&amp;nbsp;begin to drink. You can infuse it for 5-8 times by just adding boiled water into it. When steeped, the tea produces a yellow-green colour, a gentle, pure aroma, and a rich flavor. Tea should be brewed to match your personal preference and taste. &lt;br /&gt;&lt;br /&gt;Water Quality&lt;br /&gt;Water plays one of the most significant ingredient, apart from tea leave in brewing good quality of tea. Non-chlorinated water is highly recommended to use so as to produce good quality of tea especially green teas. Chlorinated tap water may affect the taste of tea making it less appealing. Therefore, water filter system which gives water a pH level of slightly over 7 is preferable.&lt;br /&gt;&lt;br /&gt;Water Temperature&lt;br /&gt;It is very much depend on type of tea you brew. For green tea, water should kept below reaching boiling point. This is because boiling water tends to over cook the tea leaves. In addition, when water is boiled, oxygen not only evaporates, but the crisp mineral texture in the brew is also lost. Whereas Pu'er can be steeped with boiling water. &lt;br /&gt;&lt;br /&gt;Quantity of Leaves and Steeping time&lt;br /&gt;If unsure, always start with lesser amount of leaves and steep them longer. This will gives you more control to the tea. Good quality tea leaves with appropriate amount of tea leaves will not go bitter, unless they are steep for a longer than the time it required. In short, you can see that brewing pure leaf teas is to be as simple as "hot water and tea".&lt;br /&gt;&lt;br /&gt;You may use the following suggestions for steeping different types of teas as a guide:-&lt;br /&gt;&lt;br /&gt;Green teas: It can provide multiple infusions. As a general rule of thumb, the darker the tea leaf, the faster the infusion.&lt;br /&gt;&lt;br /&gt;Pu'er teas: For most pu'ers, the longer you steep, the smoother they become. For the compressed pu'ers,&amp;nbsp; the recommended steep time required is twice the loose leaf pu'ers which takes at about 3-4 minutes&lt;br /&gt;&lt;br /&gt;Appropriate teawares&lt;br /&gt;Apart from the above, appropriate teawares are also important so as to preserve the heat, taste and flavor of the tea. The setting of the teawares will add color to the atmosphere and conversation. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Technique of pouring tea from the tea pot&lt;br /&gt;To add to the excitement, various tea masters using various 'kung - fu' style of pouring tea out from the teapot to each of the tea cup, bowl at various position precisely and speedily. Everyone,&lt;br /&gt;&lt;br /&gt;Below please find:-&lt;br /&gt;&lt;br /&gt;A GUIDE TO BREW PU'ER TEA&amp;nbsp; &lt;br /&gt;&lt;br /&gt;1 Prepare the necessary teaware and lay out the proper setting . If we have two guests, then tea tray, clay teapot for two, clay tea pitcher, filter, tea towel, tea utensils, two large clay cups, two coasters, kettle, tea receptacle and presentation vessel are required.&lt;br /&gt;&lt;br /&gt;Teaware preparation&lt;br /&gt;&lt;br /&gt;2. Take a chunk of compressed pu'er tea.&lt;br /&gt;Peel off a small piece of pu'er cake&lt;br /&gt;&lt;br /&gt;3 Break off the small piece of the compressed pu'er tea into loose leaves at the presentation vessel. If the compressed tea does not break off easily, use a knife to loosen up the tea. If the pu'er tea already comes in loose form, then scoop the loose pu'er tea from the canister and simply place the tea on the presentation vessel.&lt;br /&gt;&lt;br /&gt;4 Take a moment to observe the appearance and to smell the aroma of the tea. Then pass the tea presentation vessel to your guests for their turn to admire the dried tea.&lt;br /&gt;&lt;br /&gt;5 Make sure water has just reached the boiling point. Then remove the kettle and pour hot water into the teapot at least 1/3 full of tea leaves.&lt;br /&gt;&lt;br /&gt;6. Pouring hot water from kettle&lt;br /&gt;Drain hot water into pitcher completely. Alternatively you may pour boiled water from teapot into pitcher&lt;br /&gt;&lt;br /&gt;7. By this time, the presentation vessel may probably returned from the guests back to the host. The host will opens the teapot's lid and ready to put dried tea from the tea presentation vessel into the teapot.&lt;br /&gt;&lt;br /&gt;8. Tea presentation vessel&lt;br /&gt;Left hand holds the presentation vessel and gently push the dried tea into the teapot.&lt;br /&gt;&lt;br /&gt;9, Transfer of the tea&lt;br /&gt;Top up boiled water into teapot before closing its lid. Gently shake the teapot.&lt;br /&gt;&lt;br /&gt;10. Shaking the teapot:&lt;br /&gt;Pass the teapot to guests. At this time, the teapot is warm with tea inside. The guests should know that they are to open the lid and smell the dry tea's aroma, which is very different from its previous state when it is sitting on tea presentation vessel.&lt;br /&gt;&lt;br /&gt;11. Guest opens the lid and smells the tea's aroma&lt;br /&gt;Close lid and pass to the next guest.&lt;br /&gt;&lt;br /&gt;12: While the teapot is being passed around, the host pours water from the pitcher into the cups. If there is any water remaining inside the pitcher, then discard it into the tea receptacle. This should not happen if the host has gauged the size of the teapot and the cup correctly beforehand. But it is alright if this happens. No big deal. The rinsing of the teapot, tea pitcher and cups are meant to warm up the teaware.&lt;br /&gt;&lt;br /&gt;13. Pour water into the cups. Discard water at tea receptacle&lt;br /&gt;Fill up the teapot with boiled water. Closed lid. Wait about 5-10 seconds. Then pour out. This is known as the warm-up brew. Set aside this brew on the side. This will be discarded as shown in Step 15.&lt;br /&gt;&lt;br /&gt;14. Pouring of the warm-up brew&lt;br /&gt;Again pour water into the teapot. Close lid. Wait for 20-40 seconds.&lt;br /&gt;&lt;br /&gt;15. Pouring hot water&lt;br /&gt;Keep on pouring warm-up tea on the outside of the teapot, especially those made of unglazed Yixing clay.&lt;br /&gt;&lt;br /&gt;16. Teapot seasoning&lt;br /&gt;Pour tea into the pitcher before transfer to the cups. The purpose of the pitcher is&amp;nbsp;to balance the tea evenly amongst all the guests. Remember that each infusion of tea will give you&amp;nbsp;different taste. Some pitchers, depending on the sizes, may have&amp;nbsp;bigger capacity than the small tea pot. To ensure even effect, it is more appropriate that everyone has tea from the pitcher, even if it is filled by&amp;nbsp;different infusions from the tea pot.&lt;br /&gt;&lt;br /&gt;17. Pour tea into the cups&lt;br /&gt;Place the cup on the coaster and pass it to the guest. You may gauge the boiling temperature from the bubbles propping out from the bottom of the kettle. There is also a wick, usually made of cotton. The lower half of the wick is dipped into alcohol , which it absorbs. The top part of the other end of the wick extends out from the wick tube of the burner, which attached to the fuel tank. The top part of the wick is to be illuminated with either match or lighter before placing the stand ; its brass metal trivet and the glass kettle on the stove. The function of the brass metal trivet is to diffuse the heat so as to prevent heating the glass kettle directly from the stove. I love this stove not only because of its antique shape design, but the glass tank is also can be stably and nicely placed at the moulds of the base. Once the fire is lit up, the stand will then be placed at top of the base of the base, which is well secured to prevent movement. The metal trivet is also tightly held by the stand. Its superb designs add comfort to its users. After use, the fire can be easily put off by putting the stopper on the burner after the stand and its trivet have been removed. &lt;br /&gt;&lt;br /&gt;The glass kettle will then be removed and let aside to dry. Simple and easy.What do you folks think? They are also my choice because I can visualize the state of the boiling water especially for my favorite Pu'er tea. To obtain the best taste of Pu'er tea, the water must not be over boiled because it will harden the water. This will affect the tea leaves not being well absorbed in the water. When the bubbles prop out from the bottom of the kettle, you should lift up the kettle and start to brew Pu'er tea. &lt;br /&gt;&lt;br /&gt;Extra care need to be taken so as not to boil them too fast, as sudden change in temperature may cause the glass to shatter. In fact, we shouldn’t heat a glass kettle directly from the stove. Spilling boiling water on your hand may be painful! &lt;br /&gt;&lt;br /&gt;Always look for kettle with a heat-resistant handle such as wooden handle. It is much easier to pour water for your tea because you don’t have to worry of being hurt when you lift up the kettle. &lt;br /&gt;&lt;br /&gt;&lt;b&gt;Do you need the whistle type?&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;It depends very much on individual preference. Some people like kettles that whistle when the water reaches the boiling point. Others find them obnoxious. &lt;br /&gt;&lt;br /&gt;You may appreciate those with whistle as a safety feature especially for those absent-minded people so as to prevent them from accidentally boiling the kettle dry. &lt;br /&gt;&lt;br /&gt;If you do not need such a reminder and used it mainly for tea sessions, then obviously you do not need the whistle type. Since it is still fresh in your memory, I am going to give you some pointers as how to properly use and care for tea pot in this article:-&lt;br /&gt;&lt;br /&gt;- have several teapots, for different occasions or to serve different types of tea, so as to reflect its class and characteristics&lt;br /&gt;&lt;br /&gt;- always wash the teapot by rinsing with either warm or hot water. Do not use soap. After a period of use, the unglazed teapot will become shiny/glaring when it is rubbed with a soft and clean cloth.&lt;br /&gt;&lt;br /&gt;-  avoid using aluminum or enamel; aluminum may discolor the tea; chipped enamel may effect the flavor of the tea&lt;br /&gt;&lt;br /&gt;-  ceramic or bone china teapots retain the heat best&lt;br /&gt;&lt;br /&gt;-  check the glaze inside the pot for cracks and crazes&lt;br /&gt;&lt;br /&gt;-  check the handle for finger and knuckle room to avoid burns&lt;br /&gt;&lt;br /&gt;-  look for a hole in the lid to allow air to ensure the smooth flow of the tea from the pot&lt;br /&gt;&lt;br /&gt;- a lug should be part of the lid to hold it in place so the lid doesn’t crash into the cups as the tea is pouring out from the pot.&lt;br /&gt;&lt;br /&gt;-  avoid using detergent inside a teapot as this will affect the taste of the tea&lt;br /&gt;&lt;br /&gt;- remove tannin stains inside the teapot by filling and soaking the pot over several hours with a solution of hot water and four tablespoons of bicarbonate of soda – rinse thoroughly.&lt;br /&gt;&lt;br /&gt;Please share with me some of your experience as how you take care of your tea pot. Its' porous nature enables the teapot to absorb the essence of tea well. &amp;nbsp;As the teapot becomes seasoned, especially when nurtured over time, the essence of tea captured by the teapot will accentuate the character of subsequent brews. All of a sudden, I felt its loneliness and recalled its long old story. At the same time I had the idea of putting its story into journal, before it perishes from my memory.&lt;br /&gt;&lt;br /&gt;The story becomes vivid in my mind as how it came to my collection. I remember its glory days when it and 7 other 'siblings', formed a complete set. The 'family' was displayed, proudly and elegantly, at one of the tea shops in Kuala Lumpur for many years before I bought it from that merchant. At that time i just started this hobby, I found this piece the most pleasing to my eyes, as compared to some of the recommended ones from my sister's old neighbor. I had just hopped in that tea shop with some of my friends and I met my sister's neighbor there. This was the shop, he used to patronize and he was having tea with his circle of friends. The reason he recommended the remaining pieces to me because the merchant no longer wanted to keep them in his collection as one of the piece was damaged. As a result, he was clearing the remaining units at bargain price. &lt;br /&gt;&lt;br /&gt;Since then it has stood lonely at my displaying cabinet and I have decided to blog it with the intention to locate the remaining 7 'siblings' to make up the complete set. Who knows, I may be able to acquire the rest, even if is at a piece at a time. Tea is second most widely consumed beverage worldwide after water.&lt;br /&gt;&lt;br /&gt;Brewing good quality tea requires more than knowledge. It needs skills, patience and meticulous. Everything counts here - be it the process, the quality of tea, the type of water used, utensils, tea pot, cups and many others. So, in order to acquire and master that skill, you need to posses all the above.&lt;br /&gt;&lt;br /&gt;"Cha Toa" or rule of tea, inherited from centuries, is still practiced so as to obtain the best out of that particular tea in terms of its fragrance, taste, medicinal value and other benefits. To achieve the best, each and every unwritten rules pertaining to its brewing process need to be observed.&lt;br /&gt;&lt;br /&gt;Tea can also be used to destress yourself from work, that is why some people have tea sets readily at their offices.&amp;nbsp; At the same time, they use it to serve tea to their guests. It is commonly practiced in China and other parts of the world where tea is a popular beverage. To them, taking out some time to sip their favorite tea will give them real relaxation to relieve their minds and souls. &lt;br /&gt;&lt;br /&gt;Of course, if time permit, you can even have grand tea ceremony ( Kung Fu tea ceremony) whereby you&amp;nbsp; demonstrate your martial art skills in preparing the tea. Here, you will not only use all the utensils - which are normally beautifully crafted; prefaced with poems, animals, heroes, values and principles; which are so pleasing to your eyes, minds and souls, but also serve as collectors items. These utensils and other tea accessories of various sizes, shapes and colors made of various type of materials are also be used to serve different types of tea accordingly to its characteristics in term of its nature, size, shape and purpose. As a whole, you will see lots of creative works; the practicability,values and uniqueness of each and every utensil. They are either hand or machine made. These master pieces especially those hand crafted ones are valued very much by its collectors for their rarity and antiquity.&lt;br /&gt;&lt;br /&gt;Ambience may also play a significant part if one desires to have the best out of tea. Some may choose to have it at a cool, quiet place where you can find lots of greenery. While others may choose to have it at the hilltop where they can hear the bird singing and water gushing down. Of course this is very idealistic and not everyone may have the time and affinity to be close to nature. Actually to enjoy tea, one can have it in one's own home.&amp;nbsp; Should one can afford it, one can drink tea with one's friends/family in one's beautifully landscaped garden and the Japanese carp swiming gracefully in the pond. These poetic sentiments described the glory of the scenery that inspired human beings.&lt;br /&gt;&lt;br /&gt;West Lake, Hangzhou &lt;br /&gt;Originally a shallow sea inlet, due to silting this 5.68 square kilometers (about 1,404 acres) of water became the famous West Lake. I was told that the depth of the lake is around 2.5 meter to 5 meter and the lake comprises five distinct sections. The largest part is known as the Outer Lake and it is bounded by the North Inner Lake, Yuehu Lake, West Inner Lake and Lesser South Lake. &lt;br /&gt;&lt;br /&gt;Held in the embrace of hilly peaks on three sides, this water wonderland has been an attraction for centuries and it is small wonder that it was a favourite imperial retreat. The lake and its surroundings have all the elements of a traditional Chinese garden on a grand scale. Overlooking the river estuary stands the 13 story high Six Harmonies Pagoda. Dating from 970 and built on the site of an earlier pagoda that served as a lighthouse, the name refers to the six codes of Buddhism i.e. harmony of the body, speech and thought and the renunciation of personal pleasure, opinions and wealth. A climb to the top of the pagoda carries the reward of an impressive view over the river.&lt;br /&gt;&lt;br /&gt;Crossing the river is the Qiantang River Bridge. This is the first two-tier bridge to have been designed and built by Chinese engineers in modern times. The other great feat of much earlier engineering is the Grand Canal. Linking Hangzhou in the south with Beijing in the north, this is the longest man-made waterway in China and surpasses both the Suez and Panama canals.&lt;br /&gt;&lt;br /&gt;I trust the above briefing of the West Lake well describe the beauty of its scenery. We ended up in the above tea house, not the convention type. I had my lemon tea ice while my friend had green tea. The ice lemon tea, which I seldom take, was a real thirst quencher. I could feel the effect almost instantly after a few sips of it. Some critics are against the cold tea as it is not good for health. However, the overwhelming heat caused me to give in to it. To more flexible, a change is also good as it add colors to life. &lt;br /&gt;&lt;br /&gt;Whereas my friend was having green tea instead - the local delicate drink. He was only drinking and not eating the tea leaves, despite my advice to eat the tea leave. Some believe that the tea leaves give good health to human body. That's why the people there rather describe the act as "eat tea" rather than "drink tea", so as to give more appropriate meaning to it. If not of the heat, I would rather go for green tea. It also will enhance the blood circulation and cause good appetite, as a result of speeding up the digestion process. &lt;br /&gt;&lt;br /&gt;The photo below tells thousands of words and it shows myself being very exhausted. Amidst the modernity and bustle of the city, one can still find serenity and beauty in the vicinity of Hangzhou's famed West Lake.&lt;br /&gt;&lt;br /&gt;I really have lots of fun after spending a lovely time at the Hangzhou West lake and I encourage you do the same when you have the time.&lt;br /&gt;&lt;br /&gt;Thereafter, we rushed to catch a cab to another place for a street walk and dinner before I call off my trip there. Both of us are teenage friends and we know each other since we were 11 years old. We went to the same primary and secondary school.&lt;br /&gt;&lt;br /&gt;I chose this ancient shop because it is very meaningful to me. The mandarin character means "tea shop for famous people". It reminded me that tea was considered as luxury item in the past, only the rich and famous people are able to access to it.&lt;br /&gt;&lt;br /&gt;Thereafter, it has been planted and produce in mass scale that allowed all walks of people to have access to it. So, thanks to those who have initiated such a noble idea to spread tea to more people. Similarly, this concept was later applied in automobile by Mr Ford, who had brought down the price of the car so more&amp;nbsp; people can afford to own it. This noble idea and action bring better life to more people. Hope it does so to you too.&lt;br /&gt;&lt;br /&gt;The literary meaning of its Chinese Character is "happiness". I find it has a very significant meaning in our lives. Success without happiness is a failure. I bought this piece is for my future tea corner. I hope that I can hang it at the wall of my tea corner to remind my guests and myself to seek happiness from our precious lives especially when we have our good tea times drinking our tea at that corner. Let tea be the tool to bridge us to the path of happiness through closer relationship with each other.&amp;nbsp;&lt;br /&gt;&lt;br /&gt;Through tea, we also can cultivate good and healthy spirit of caring and loving each other. Trust that tea will also cement relationship, which had happened previously. The other mandarin characters of phrases also stipulated that happiness can cure aging, and prolong life. Now, you can see the great work done by this artist, who has expressed his wisdom well through every piece of his work, which I am greatly appreciate. He has been playing a great significant impact on human beings. His humble nature is well respected and your great support is greatly appreciated. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;I strongly hope more people will have such wisdom to create happiness for human beings so that all of us can contribute significantly towards healthy living for the real betterment of life.&lt;br /&gt;&lt;br /&gt;Apart from the above significant function, this hand painting also can make a unique culture statement for my home.&lt;br /&gt;&lt;br /&gt;Below are the photos taken with the artist at the front of his shop at the old town in Shanghai. The above Chinese calligraphy means "serving the people". The simple yet rich in content was advocated by Mr. Sun Yat-sen. I must admit that I have indebted to him because he had a great and significant impact on my life. I also strongly believe that lots of people have been inspired by him as well. He is also one of key figures who had contributed significantly in bringing China back to its former glory.&lt;br /&gt;&lt;br /&gt;This piece will be added to my future tea corner.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;I find the above bamboo slip has a very meaningful and close relationship with this  blog. This is because tea is well fitted into this context. Tea has a great impact on people's lives and bring lots of benefits to the people through its multi-function roles in the world. It has been serving people for more than 5,000 years, in the form of beverage, currency, herb, medicine, art and culture. &lt;br /&gt;&lt;br /&gt;Tea also helps to cement relationship amongst the human beings. &lt;br /&gt;&lt;br /&gt;In this connection, its indirect function as preserving peace and harmony cannot be ignored. Therefore, we can not ignore its social status as peace keeper. As such, I do hope you will continuously give your support to this blog so as to educate people to cultivate this healthy hobby at the same time promote peace through it.&lt;br /&gt;&lt;br /&gt;You can be rest assured that it will also enriched your life through this healthy hobby as the same time promote the sharing spirit as a way to maintain peace and harmony to human mankind. &lt;br /&gt;&lt;br /&gt;Through this healthy hobby, one learns to be clam and patient.
